The craft
What makes our pizza Neapolitan
The dough follows the classic Neapolitan tradition: it starts with a biga pre-ferment and matures from fine Tipo-00 flour for 48 to 72 hours, slowly developing its flavour. In the wood-fired stone oven each pizza bakes at around 480–485 °C in just 60 to 90 seconds – creating the airy, lightly charred crust (cornicione) and the soft, aromatic centre.
Plus Fior di Latte instead of industrial mozzarella, San Marzano tomatoes as the base and cold-pressed olive oil to finish. No overloaded pizza – Neapolitan craft.

How do you make your pizza dough?
Our pizza dough follows the classic Neapolitan tradition and starts with a biga – a pre-ferment prepared the day before that builds aroma and structure. From Tipo-00 flour, water, yeast and salt the dough then matures for 48 to 72 hours, fermenting slowly at room temperature. In the wood-fired stone oven at around 480–485 °C the pizza bakes in 60 to 90 seconds – creating the airy, lightly charred crust and the soft centre. Do you have vegetarian or vegan options?
Yes, our menu always includes vegetarian dishes: salads, vegetarian pizza (e.g. Margherita, Bufala, Verdure, Tartufo), pasta al pomodoro, gnocchi alla sorrentina, risotto and seasonal starters. Vegan dishes (without dairy and eggs) are possible in coordination with our team – just let us know.
